Hey friends! I am sharing another recipe with you today. I made this last week and delivered it to our friends and it has kind of become my go to meal to deliver. It’s easy to throw it together early and then refrigerate and bake later in the day, or if you take it to someone, they can then bake at their convenience.
You will need:
2 lbs. ground beef
2 containers of cottage cheese
1 box of lasagna noodles (you won’t use them all, but can)
2 cans of Italian Garden (great value brand) pasta sauce more on this below
Not pictured: The shredded mozzarella for the top
I use a throw away pan if I am delivering to someone, so I get 3 layers in one of those but if I’m making for home, I use a 9X13 pan and get the same result.
The sauce we use is generic and from Walmart. It’s the same we dip toasted ravioli in, use for spagetti, etc. Brandon loves this sauce and is disappointed when I don’t use it. I think it is best as a lasagna sauce though. You could obviously use whatever sauce your family prefers, ours is this one. Bonus to this sauce, it has some veggies in it, so your kids may or may not notice that part;)
I start with pouring a small amount (just enough to coat the bottom) of sauce into a sprayed pan, then my first layer of noodles. The noodles expand so no worries if it isn’t totally covering pan.
Brown your ground beef and then drain it.
After draining the ground beef pour it back into your skillet with almost all the rest of your sauce, saving some sauce for your very top layer. Once meat and sauce in skillet is heated, pour a layer onto noodles.
Then layer cottage cheese (I know some use ricotta cheese and I’m sure that would be fine, the girls prefer cottage cheese so we use that). Add another layer of noodles, the rest of your beef mixture, then cottage cheese again. Then a last layer of noodles, the rest of sauce from jar (or if you have some with meat leftover that works fine also and I did) and finish it with shredded mozzarella on the top.
When your ready to bake, Bake for 1 hour at 350.
Enjoy!!!
Don’t mind the awful photos. I am not a food blogger clearly;)
Have a great week friends!
